This is the house’s signature non-vintage Champagne a cuvée that perfectly reflects the essence of J. Lassalle’s style. It is crafted from a blend of 60% Meunier, 20% Pinot Noir, and 20% Chardonnay, sourced exclusively from the family’s own Premier Cru vineyards in Chigny-les-Roses.

Winemaking & Aging
Like all Champagnes from J. Lassalle, the wine undergoes both alcoholic and malolactic fermentation, followed by a minimum of three years of aging on the lees in the cellar. This patient process creates depth, roundness, and a beautifully refined mousse.

Tasting Profile
In the glass, it shows a pale golden hue with fine, persistent bubbles. The bouquet offers notes of fresh apple, citrus, white flowers, and a hint of brioche. On the palate, it is lively and fresh with an elegant balance between fruit, minerality, and a subtle creamy texture. The finish is clean and precise, making it both charming on its own and highly food-friendly.
