J. Lassalle Angeline 2012

A prestige cuvée of patience and refinement
“Angéline” is one of the great treasures of J. Lassalle, crafted only in exceptional vintages and named after the third generation of the family. The 2012 release is a blend of 60% Pinot Noir and 40% Chardonnay from Premier Cru vineyards in Chigny-les-Roses, and reflects the house’s dedication to elegance, balance, and time-honored tradition.

Vinification & Aging
The grapes are hand-harvested and gently pressed, followed by temperature-controlled fermentation and full malolactic conversion. The base wines are matured in tanks for 8–10 months with three careful rackings, before bottling on the estate in April 2013. The Champagne then spent a full 10 years aging on its lees in bottle, gaining remarkable depth and complexity, before disgorgement just four months prior to release. A dosage of around 7 g/L brings the final touch of harmony.

Tasting Profile
Golden in hue with delicate, persistent bubbles. The nose opens with notes of ripe citrus, baked apple, toasted brioche, and roasted almonds, all layered over a fine chalky minerality. The palate is rich and textural yet strikingly precise, combining maturity and freshness with a long, elegant, and saline finish.

Serving & Pairing
A truly gastronomic Champagne, ideal with lobster, scallops, turbot, creamy risottos, or aged cheeses. Equally captivating on its own, where its complexity unfolds beautifully with time in the glass.
