Dom Ruinart Vintage 2007 Magnum

This champagne is a Blanc de blancs (bdb) which means it it constructed from pure Chardonnay exclusively from parcels with Grand Cru status. 72% from the Côte des Blancs (primarily Chouilly, Le Mesnil and Avize) and 28% from the northern slopes of the Montagne de Reims (primarily Sillery and Puisieulx). This involves partial barrel fermentation and, blending the final cuvée in the first months after the harvest. Then for  maturation for at least 96 months before disgorgement and dosage which in recent years has been reduced to around 6g. to meet the freshness and minerality and not least the current demand for an expression that is a little bit drier. This vintage champagne can still be stored in years to come. But Dom Ruinart always tastes good, both old and young.
